HOME MADE " VEGETABLE PAU"



Pau is Chinese food.  The bread like texture is made of wheat flour.  The filling of it can be meat or vegetable.

I have learnt and tried making it yesterday and I should said it was a success!!

So here I am to share my successful pau making experience with you....ha.......ha....ha.........

The recipe is :-
Dough Ingredient:
(a)  3g instant yeast
      2 tea spoon sugar
      200cc slightly warm water (not too warm as not to destroy the yeast)
      150g wheat flour (all purpose flour)
(b)  350g wheat flour (all purpose flour)

Filling:
500g sengkuang (Mexican yam)
1 small size carrot
some garlic - chop finely
some Chinese celery - cut into small pieces
1 table spoon cooking oil for stir fry (just a little bit will do)
salt and pepper to taste

Method:
Filling
1.  Peel senkuang and carrot, cut into fine stripes
2.  Heat the wok and pour in 1 table spoon of cooking oil
3. Saute the garlic  and put in the carrot, stir fry for 1/2 min
4. Add in the senkuang and stir fry till the moisture dry up
5. Add in the Chinese celery and mix well
6. Add in the salt and pepper to taste.

Dough
1.  In a mixing bowl, mix together dough ingredient (a)
2.  Mix well and let the mixture rest for 1/2 hour
3.  After 1/2 hour when many bubbles appear, add in the            dough ingredient (b) and knead till it form 
     a smooth dough.( you may add in a bit more flour if you find it too moist or reduce a bit of                                                              flour if  you find it too dry)
4.  Let the dough rest for 1 hour
5.  After 1 hour, the dough will expand and proof to double        in size
6.  Divide the dough into 16 pieces of little dough  equally
7.  Dust the rolling board and rolling pin with some flour and      roll the little dough into smooth flat round sheet of  about      3mm thick at the center and thinner towards the edge of        the round sheet
8.  Wrap the filling with the round sheet, wrap with folds            after folds at the edge of the round sheet and making it        to form into a round ball shape
9.  Let the pau rest for 3/4 hour, after 3/4 hour of resting,            steam the pau in boiling water for 10 minutes
10. Ready to serve




I suppose pictures speak better then words, so I  would like to share some photographs which show the process.........

1.  instant yeast








2.  Mix instant yeast  with slightly warm water, sugar and wheat flour
3.  Mix well and let the mixture to rest at room temperature 
(about 27 to 30 degree Celsius) for 1/2 hour


4..  After resting for about 1/2 hour, many bubbles appear
5.  Mix "4" shown above with more wheat  flour and  knead till it form a dough and let it rest at room temperature for
 about 1 hour

6.  Dough after resting for 1 hour

7.  Divide the dough into 16 little dough  equally,  roll into a flat sheet and put  in the vegetable filling











8.  Wrapped the filling with the  flour sheet to form a pau












9.  While wrapping, make folds after folds to seal up  and this has to be forming into a small round shape

10. Upon completion of all the wrapping work, 
let the pau rest for another 3/4 hour
11.  After resting for 3/4 hour,  the pau are ready for steaming.  Steam the pau in boiling water
for about 10 minutes.
12.  Ready to serve
